Easy peasy fall lunch

I love food made easy. Don’t get me wrong, I also love cooking elaborate dishes that take up a good chunk of time. But when you’re in a rush, pressed for time, have a long to-do list, food made easy is the way to go.

The other day I accidentally stumbled upon a recipe that I thought would make for the perfect fall lunch, and the upside: only 3 ingredients. Easy. Peasy.

Introducing…

Apple and cheddar whole wheat quesadillas adapted from Whole Foods

Not only do the flavors of apple and cheddar complement each other perfectly, but apples are in-season for the Fall!

This lunch took me about five minutes to make. Let me break it down for you.

1. Slice up an apple.

2. Place the apple slices on the whole wheat tortilla.

3. Top the apple slices with shredded cheddar cheese.

4. Fold over the tortilla and place in a frying pan sprayed with cooking spray over medium high heat.

5. Cook about 2 minutes on each side or until each side is golden brown.

Viola! You’ve got yourself a warm fall lunch. Packed with fiber to keep you full until your next easy peasy meal.
